Turkey Gravy

CREATE YOUR FLAVOUR BASE

  1. Remove your fully cooked turkey from the pan and set it aside.
  2. Pour out most of the fat. You can scoop with a spoon or use a fat separator.
  3. Turn up the heat on a large burner and place your roasting pan on top. Heat until very hot.
  4. Step 4: Add your deglazing liquid of choice. We suggest apple cider for a sweeter gravy or chicken stock for a deeper more aromatic flavour. You only need about a cup, just enough to cover the bottom of your pan. It will start boiling almost immediately.
  5. Step 5: Using a wooden spoon, scrape the bottom of the pan, and get all the bits sticking to the bottom of the pan while the liquid is boiling.
  6. Once you got all the bits dispersed, leave to simmer for a minute to reduce the amount of liquid. The result is your gravy base.

BUILD YOUR GRAVY

You will need:

  • ½ C Flour
  • 3 Tbsp Butter
  • 4 C Chicken Broth
  • 1 Tsp Dry thyme
  • Salt & Pepper to taste
  1. Melt butter in a medium saucepan over medium heat. Whisk in flour and thyme until lightly browned, about 1 minute. Add 1 C broth and whisk until there are no more lumps. Set aside.
  2. With the pan hot, add the chicken and flour mixture and whisk into roasting pan.
  3. Once the liquid begins to thicken, add the remainder of the stock and continue to stir.
  4. Continue cooking until desired thickness is achieved. Add salt, pepper and thyme and stir to combine.

Serve Hot.
