Ingredients
2 Litres Apple Cider
4 Cups Water
½ Cup Brown Sugar
½ Cup Maple Syrup
1 Cup Kosher Salt
1 Tbsp Black Peppercorns
2 Onions, quartered
6 Garlic Cloves, crushed
2 Oranges, sliced
2 Cups Ice Cubs
Method
Make Brine one day before cooking turkey.
Add all ingredients, except the ice cubes to a large pot and bring to a boil. Boil until sugar and salt is dissolved, around 15 minutes.
Remove pot from heat and allow brine to come to room temperature.
Place turkey in a brine bag or large stock pot and pour brine over turkey. Add ice cubes and make sure brine covers the turkey completely.
Refrigerate overnight.
Next day, remove from brine, pat dry with paper towel and prepare turkey for roasting.
