Carving a turkey is a crucial part of any festive or special meal. Follow these steps for a perfectly carved turkey that’s both juicy and easy to serve.
Carving Steps:
- Slice off the Leg and Thigh:
- Place the turkey on the cutting board with the cavity facing you. Remove any clips from the legs.
- Slice the skin near the thigh to separate the leg from the body.
- Once you hit the bone, grasp the thigh and bend it backwards until the joint pops and is visible. Clean your hands.
- Slice through the joint and the rest of the thigh meat to separate the leg and thigh from the backbone.
- Repeat this process for the second leg and thigh.
- Separate Leg and Thigh:
- Wiggle your knife in the joint between the thigh and the drumstick until you feel the cartilage.
- Slice through the joint. You may need to use your hands to pry them apart slightly.
- Place the drumsticks on the platter.
- Remove the bone from the thigh, place the boneless thigh skin-side-up, and slice it.
- Slice off the Wings:
- Pull the wings back until you hear a crack, then slice through the joints.
- Separate the wing into two pieces at the joint and place them on the platter.
- Remove the Breasts:
- Make a long, deep cut along one side of the breastbone.
- Use your other hand to pull the meat away from the bone while slicing.
- Once separated, remove the breast from the bone.
- Repeat for the second breast. Remove the carcass for disposal or save for turkey stock.
- Carve the Meat:
- Carve the boneless thighs into serving-size pieces and place them on the platter.
- Carve the breasts against the grain, like any other boneless cut of meat, and place the slices on the platter.
