Ingredients:

    • 1 ½ pounds flat iron steak
  • For the Blue Cheese Compound Butter:
    • 3 tablespoons softened unsalted butter
    • 1 ounce crumbled blue cheese
    • 1 tablespoon chopped fresh chives
    • ⅛ teaspoon cracked black pepper

Instructions:

  • Marinate the Steak: In a bowl, whisk together olive oil, red wine vinegar, minced garlic, 1 tablespoon black pepper, rosemary, oregano, and salt. Pour the mixture into a resealable plastic bag. Add the steak to the bag, ensuring it’s well-coated with the marinade. Squeeze out excess air and seal the bag. Refrigerate and marinate for 30 to 60 minutes.
  • Preheat the Grill: Prepare an outdoor grill for medium-high heat. Lightly oil the grate. Remove the steak from the marinade, shake off the excess, and discard the remaining marinade. Let the steak stand at room temperature as the grill warms.
  • Prepare Blue Cheese Compound Butter: In a small bowl, mash together softened unsalted butter, blue cheese, chives, and ⅛ teaspoon of black pepper until well combined. Set aside.
