CREATE YOUR FLAVOUR BASE
- Remove your fully cooked turkey from the pan and set it aside.
- Pour out most of the fat. You can scoop with a spoon or use a fat separator.
- Turn up the heat on a large burner and place your roasting pan on top. Heat until very hot.
- Step 4: Add your deglazing liquid of choice. We suggest apple cider for a sweeter gravy or chicken stock for a deeper more aromatic flavour. You only need about a cup, just enough to cover the bottom of your pan. It will start boiling almost immediately.
- Step 5: Using a wooden spoon, scrape the bottom of the pan, and get all the bits sticking to the bottom of the pan while the liquid is boiling.
- Once you got all the bits dispersed, leave to simmer for a minute to reduce the amount of liquid. The result is your gravy base.
BUILD YOUR GRAVY
You will need:
- ½ C Flour
- 3 Tbsp Butter
- 4 C Chicken Broth
- 1 Tsp Dry thyme
- Salt & Pepper to taste
- Melt butter in a medium saucepan over medium heat. Whisk in flour and thyme until lightly browned, about 1 minute. Add 1 C broth and whisk until there are no more lumps. Set aside.
- With the pan hot, add the chicken and flour mixture and whisk into roasting pan.
- Once the liquid begins to thicken, add the remainder of the stock and continue to stir.
- Continue cooking until desired thickness is achieved. Add salt, pepper and thyme and stir to combine.
Serve Hot.
