Ingredients

3 lbs. Pig tails, tail ends removed

Sauce:

  • 1.5 tsp salt
  • 1/3 tsp fresh ground pepper
  • 1.5 tsp paprika
  • 1.5 tsp dry mustard
  • 1.5 tsp brown sugar
  • 1.5 tblsp worcestershire sauce
  • 3/4 cup mild salsa
  • 3/4 cup water
  • 1/3 cup cider vinegar
  • 2/3 very finely chopped onion
  • 2 cloves garlic, minced.

Directions

  • Place pig tails, fat side up on a rack in an open roasting pan.
  • Bake 2 hours at 300 degrees F
  • Drain off the fat.
  • Combine the ingredients for the sauce and simmer for 10 minutes
  • Lay the pig tails in the bottom of an open roasting pan.
  • Spoon over some of the sauce not all.
  • Return to oven and continue cooking for another hour.
  • Spoon more sauce periodically so that they are well coated.
